A Taste of Something Sweet: Tempting Desserts & Pastries Aboard Oceania Cruises
There are plenty of reasons to look forward to a voyage with Oceania Cruises, but for those of us with a sweet tooth, one of the most anticipated moments takes place at the end of a meal – or whenever the craving strikes. You might be lured by a delicate French pastry, a beautifully composed chocolate dessert or Bruxelles waffles topped with fresh banana, salted caramel sauce and whipped cream. Whatever your weakness, dessert is one of life's great pleasures, and aboard our ships we take that pleasure rather seriously. So much so that we’ve created a new approach to pastry chef training for the talented teams who put their heart into crafting our desserts and pastries.
Here, we’re taking a closer look at the artistry, traditions and skilled hands behind the sweeter side of The Finest Cuisine at Sea®, starting with an initiative that’s as much about the people as the pastries.
Called The Floating Pastry Academy, this innovative partnership with revered digital training platform The Butter Book® is the cruise industry's first comprehensive, multi-year pastry training program of its kind, designed specifically for our onboard pastry and bakery chefs. It's an ambitious investment in their professional development and a fascinating glimpse into the craftsmanship that goes into every scrumptious bite. That commitment to passing knowledge from one generation of chefs to the next is central to the academy's purpose.
On the Water, Pastry Light as Air
Great pastry begins long before a dessert reaches your table. Behind the airy layers of a croissant and the glossy finish of a chocolate ganache lie years of practice, technical knowledge and an unwavering commitment to the craft.
These are precisely the qualities our new Floating Pastry Academy aims to nurture. As for resisting the temptation to devour every delicious creation they prepare, that’s a challenge we’ll leave entirely to our chefs.
Developed in partnership with The Butter Book®, the digital pastry and baking education platform founded by renowned Chef Sébastien Canonne, our academy provides more than 200 Oceania Cruises pastry and bakery chefs with a three-year training program combining online instruction with practical assessments aboard our ships. From newcomers mastering essential techniques to experienced professionals refining specialized skills, participants follow a progressive curriculum rooted in the time-honored practices of French pâtisserie, with chef-led courses, hands-on training and certifications designed to advance their expertise and careers.
The Floating Pastry Academy reflects a philosophy that has long guided Oceania Cruises: exceptional cuisine depends on exceptional people. The idea grew from a collaboration between two chefs united by a shared passion for their craft. Chef Eric Barale, our Executive Culinary Director, has spent his career refining his skills in Michelin-starred kitchens across Europe and is a member of the prestigious Maîtres Cuisiniers de France. As he explains: “This new academy reflects the respect we share for the traditions that shaped us and our passion for culinary excellence at sea.”
Chef Canonne's career spans prestigious restaurants and institutions around the world, including the Palais de l'Élysée in Paris. Perhaps most notably, Chef Canonne holds the prestigious title of Meilleur Ouvrier de France, the highest distinction awarded to French craftspeople in recognition of exceptional technical mastery.
It's a particularly fitting partnership for Oceania Cruises, where French culinary heritage has long been an essential part of our identity.

A Taste of the Upper Crust
Of course, while the artistry behind a beautiful pastry is fascinating, the real pleasure comes when you finally get to taste it. The Bakery, conveniently located near Baristas, our shipboard coffee venue, is one particularly tempting destination aboard Oceania Vista, Oceania Allura and the newly reinspired Oceania Marina. It will also be featured on our upcoming Sonata Class ships, beginning with Oceania Sonata, debuting in August 2027.
You might be making your way toward Baristas for a morning cappuccino when the irresistible aroma of freshly baked pastries causes you to make a sudden turn toward the Bakery. After all, what better accompaniment to a perfectly prepared coffee than a warm pastry fresh from the oven?
For many travelers, part of the appeal of culinary cruises is discovering how regional traditions are interpreted at sea. The Bakery celebrates French and Italian specialties, each offering its own delicious interpretation of the pastry chef's craft. You might discover a sfogliatella, a traditional confection from Italy's Campania region, with delicate layers of crisp pastry surrounding a sweet ricotta filling. Perhaps a classic French chausson aux pommes will catch your eye, a golden, flaky turnover filled with apple compote. And as afternoon approaches, the focus shifts to savory delights such as quiche Lorraine, with its silky custard filling, bacon and buttery crust never failing to hit the spot.
There's something especially satisfying about enjoying these European specialties while sailing toward the very destinations that inspired them. Then again, you hardly need to be cruising the Mediterranean to appreciate a little French or Italian treat. Even when in Southeast Asia or Alaska, you may still do as the Romans do.
The Crêpe Escape
If your idea of dessert leans toward something prepared to order, the Crêperie aboard might just be your new favorite guilty pleasure. Located near Baristas and the Bakery, this inviting venue brings together French crêpes, Belgian-style waffles and Italian gelato, with more than 20 mouthwatering recipes developed by our Executive Culinary Directors, Chefs Alexis Quaretti and Eric Barale.
The menu offers plenty of opportunities for indulgence, from classic crêpe Suzette, with its buttery orange sauce and pleasing hint of caramelized sugar, to colossal bubble waffles filled with Italian ice cream and an assortment of tasty toppings. And for those who prefer to exercise a little creative control over dessert, the possibilities extend to endless combinations of flavors, sauces and accompaniments. Go on, surprise yourself.
For Chef Quaretti, one of the most appealing choices is also among the simplest. “Among my personal favorites is the French crêpe with Nutella and whipped cream,” he shared, fondly recalling how his grandmother taught him to prepare the perfect crêpe when he was growing up. It's a charming reminder that even the most accomplished chefs often draw inspiration from cherished childhood memories.
The Crêperie, currently aboard Oceania Allura and Oceania Marina, is also planned for our upcoming Sonata Class ships, giving you another delicious way to treat yourself aboard Oceania Sonata and her sister ships.
Of course, the sweet temptations extend well beyond our specialty venues. At Terrace Café, an enticing array of miniature desserts beckons from beautifully arranged displays, while Red Ginger offers Asian-inspired creations, including a dark chocolate crème brûlée infused with lemongrass. At Toscana, the quintessential tiramisù provides a fitting finale to an Italian feast, while The Grand Dining Room presents an ever-changing selection of desserts inspired by flavors from around the world, from the airy Grand Marnier soufflé to a refreshing Key lime pie. Whatever the venue, there's always something delicious to look forward to at the end of a meal. And who's counting if you ask for seconds?
From the simplest pastry to the most elaborate dessert, every sweet creation aboard Oceania Cruises reflects the skill and dedication of the chefs behind it. With The Floating Pastry Academy, we're investing in that talent and ensuring that the artistry of fine pâtisserie continues to flourish across our fleet.
