French Specialty Restaurant Jacques Coming to Allura™ and Vista

We are excitedly getting ready to welcome to our fleet our newest ship, Allura, when she makes her debut this July. In addition to her sophisticated yet casual ambiance and warm, attentive staff, she’ll feature a host of celebrated – and always included at no extra charge – gourmet specialty restaurants, including our signature French dining venue, Jacques. Named after legendary Master Chef Jacques Pépin – Oceania Cruises’ founding Executive Culinary Director and patriarch of our esteemed culinary program – Jacques has been a guest favorite on board Marina™ and Riviera™. Jacques will also appear on Allura’s sister ship, Vista, this fall, bringing its renowned culinary delights to all four of our luxurious 1,200+ guest ships.

The Essence of French Cuisine at Sea
Jacques brings the warmth and elegance of a traditional Parisian bistro to the sea. Guests can look forward to signature dishes such as duck with Grand Marnier sauce and veal medallions with morel sauce, alongside new vegetarian options. Timeless desserts like Crêpes Suzette and profiteroles will remain highlights, while even more indulgent treats will be added to the dessert trolley. For an extra touch of authenticity, several new dishes – including beef tartare – will be prepared tableside, offering an immersive dining experience.

Creative Culinary Collaboration
Oceania’s two Executive Culinary Directors, Alexis Quaretti and Eric Barale – both Master Chefs of France – are working closely with Chef Pépin to preserve the Jacques restaurant’s most popular selections while introducing new, innovative dishes, including cherished recipes from Chef Alexis’ personal childhood memories.

Honoring Tradition While Embracing Innovation
Jacques Pépin’s culinary influence has been a cornerstone of Oceania Cruises since the line’s inception. And, as Chef Pépin noted: “This is the perfect opportunity to experiment with some delicious new dishes and to explore unique ways to serve some of the classics that our guests have come to know and love. We have lots of exciting plans for this latest iteration of Jacques. I cannot wait to share them.”

Recently, we hosted a Taste of Allura event on board Vista in Miami, where guests enjoyed a delicious preview of some of the exquisite new and classic dishes that will be featured. The experience began with freshly baked sharing bread and salted butter, followed by a Provençal-style spinach fritter, deviled egg topped with smoked trout rillette and sturgeon caviar, lobster thermidor, as well as the aforementioned veal medallions in morel sauce and the beef tartare prepared tableside. Decadent cream puffs topped with chocolate sauce and mignardises were the perfect ending to this gastronomic journey. Are your taste buds dancing yet?
